- 2 avocados
- 1 large frozen banana
- 1 handful of ice
- 1 (14-ounce) can light coconut milk, preferably cold if you like cold smoothies

- Then sift together all of the dry ingredients except the sugar.
- Mix all the wet ingredients in a bowl, including the super mashed avocado.

- Mix the wet with the dry at once, and beat with a whisk (by hand) until smooth.
- Pour batter into a greased cake tins.
- After this bake for 30 to 40 minutes, until a toothpick inserted comes out clean.

Coconut Avocado Popsicles

- 14 oz canned coconut milk, full-fat, well shaken

- ½ cup tahini
- 2 heaping tbsp unsweetened applesauce

- ⅔ cups coconut flour

It’s no secret that if you don’t have a peanut allergy, you’ll love peanut butter. You’ll also love the recipe for peanut butter and avocado pudding.
Ingredients
- 1 ½ ripe avocados
- 1 large ripe banana
- ½ cup unsweetened cocoa or cacao powder
- ½ cup salted creamy or crunchy peanut butter (plus more for topping)
- ½ cup sweetener of choice i.e. maple syrup, agave, date paste or honey if not vegan
- ¼ cup almond milk or other non-dairy milk
- Coconut Whipped Cream
Instructions

Ingredients
- 3 medium size (1 lb. in total, when weighed with pits) ripe Hass Avocados, pitted and skinned
- 1 can (15 ounces) coconut milk
- ½ cup heavy cream
- ½ cup (3.5 ounces) granulated sugar
- ½ tsp rum
- ⅛ tsp salt
- ½ tsp lime juice, freshly squeezed
- ¼ cup unsweetened coconut, toasted (as garnish)
Instructions
- Process avocados in a food processor until they are completely pureed
- Add in the coconut milk, heavy cream, sugar, rum, salt, and lime juice.
- Process until it is a smooth mixture, 20-30 seconds.
- Transfer it to a bowl and cover it with stretch film.
- Let it cool thoroughly in the fridge.
- Once chilled, churn it in your ice cream maker according to the manufacturer’s instructions.
- Place in an airtight container and freeze until firm.

Ingredients
- 1 ½ cups AP flour
- ¼ cup cornmeal
- ¼ tsp salt
- ½ tsp baking powder
- ½ tsp baking soda
- 6 tbsp butter softened
- 1 ½ cups sugar
- 1 ripe avocado
- 2 large eggs
- 1 tsp vanilla extract
- ⅜ cup buttermilk
- 16 tbsp dulce de leche
Instructions
- Reheat oven to 350. Put cupcake liners in the muffin tin.
- In a medium-sized bowl, sift together flour, cornmeal, salt, baking powder, and baking soda.
- Set aside.
- Set the eggs out on the counter to come to room temperature while you beat the butter and -sugar.
- Beat butter on medium speed in a standing mixer bowl until softened and pliable.
- Add the sugar and beat until light and fluffy, about 4 minutes.
- Add the avocado and beat another minute to incorporate.
- Scrape down the sides of the bowl to ensure that everything is thoroughly mixed.
- Add the eggs one at a time, beating 1 minute after the addition of each egg.
- Beat in vanilla extract.
- Reduce the mixer speed to low and add half of the flour mixture, all of the buttermilk, and then the rest of the flour mixture.
- Beat just until combined.
- Pour into cupcake liners until they are about ¾ full.
- Put a dollop (about a tsp) of dulce de leche on top of each liner full of batter and swirl around with a butter knife.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Let cool for five minutes in the pan and then remove to a wire rack.
Avocado Cupcakes
An avocado cupcake is a great dessert, especially for birthday parties. A recipe that is fun, sweet, and healthy is always a winner.
Ingredients
- 1 ½ cups of flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup of sugar
- 2 eggs
- 1 ripe avocado
- ¾ cup of vegetable oil
- ⅔ cup of milk + 1 tbs
- 8 oz cream cheese room temperature
- 1 cup powder sugar
- ½ cup of butter room temperature
- 1 tsp vanilla
Instructions
- Preheat the oven to 350 and line the muffin pan with cupcake liners.
- Prepare all the ingredients and have them ready before starting the batter.
- Sift the flour, baking powder, baking soda, and salt together and set aside.
- Mash the avocado very well or even put it through the food processor, set aside.
- Beat the sugar and eggs together, at high speed, until light and fluffy, about 5-7 minutes.
- Lower the mixer to medium, with mixer running, drizzle in the oil and beat until well combined.
- Add the avocado mash.
- Alternating, beat in dry ingredients and milk on low speed. Starting and ending with dry ingredients.
- Divide the batter between the cupcake cups.
- Bake for 18-20 minutes. Do a toothpick test to make sure they are done.
- Cool completely before frosting.
- Combine the ingredients for the frosting in a mixer.
- Beat until very well combined.
- Frost the cupcakes and enjoy them!
Avocado Chocolate Truffles
What could be sweeter than always having a few chocolate truffles on hand? Not only is this dessert sweet, but it is also fairly simple and straightforward to make.
Ingredients
- Ripe avocado mashed
- ¾ cup dark chocolate melted
- ½ tsp vanilla extract
- ¼ tsp cinnamon
- Cocoa powder
Instructions
- Melt dark chocolate in a bowl.
- In a separate bowl, mash avocado.
- When chocolate is smooth, pour into mashed avocado and stir together.
- Add in vanilla and cinnamon.
- When combined and clump-free, place in the refrigerator for about a half-hour.
- When cooled and hardened, scoop into 10-12 balls and roll until smooth.
- Roll each ball in cocoa powder and serve.
Avocado and Oatmeal Raisin Cookies
We wanted to make sure we have a recipe that was extra healthy on our list. Oatmeal cookies are always great if you’re craving for something sweet but you do not want to go all out on chocolate or other sweets. Fortunately, recipes like this one can save the day.
Ingredients
- 1 cup white whole wheat flour
- ¾ cup all-purpose flour (or use 1 ¾ cup white whole wheat flour and omit the all-purpose flour)
- 1 tsp baking soda
- ½ tsp salt
- 1 ½ tsp cinnamon
- ½ cup mashed avocado from 1 large, ripe California Avocado
- 4 tbsp butter, at room temperature
- ½ cup brown sugar
- ½ cup of granulated sugar
- ¼ cup of vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- ½ cup crisp breakfast cereal
- ¾ cup oatmeal
- ½ cup coconut
- 1 cup raisins
Instructions
- Preheat oven to 350 degrees.
- Lightly spray 2 sheet pans with cooking spray.
- Combine white whole wheat and all-purpose flour, baking soda, salt, and cinnamon. Set aside.
- Combine avocado, butter, brown sugar and granulated sugar in the bowl of an electric mixer. Beat on medium speed until light and fluffy, about 2 minutes.
- Add oil, egg, and vanilla and beat until well combined.
- Add flour mixture and beat just until all dry ingredients are incorporated.
- Add rice cereal, oatmeal and coconut, and mix. Stir in raisins.
- Drop cookies in rounded tbsp with an ice cream scoop or a spoon.
- Flatten slightly with the palm of your hand and sprinkle each mound of dough with ½ tsp of turbinado sugar.
- Flatten again with your palm or a flat bottom glass.
- Bake for 14-16 minutes or until golden brown.
- Let cookies sit on the pan for 2-3 minutes then transfer to a cooling rack.
