Avocado desserts are getting really trendy, and this recipe (published by Pure Wow) is your tool to leave everyone at the table drooling. Try it out, we promise you won’t regret it!
The recipe below is for 10 servings. Let’s start with the crust:
- 9 digestive biscuits (we suggest to stick with graham crackers)
- 1 tablespoon of sugar
- 4 tablespoons of melted butter
Start by crushing the crackers mixed with the sugar (a food processor might be handy) until you get fine crumbs. Transfer these to a bowl and combine them with the melted butter. Once you get a fine mixture, press this in the bottom of a pan in order to get a fine even layer in the base. Freeze it for 10 minutes.
Now for the filling, you’re gonna need these ingredients:
- 1 ¼ (150g) cups of heavy cream
- 1 packet of powdered gelatin
- 12 ounces (~340g) of cream cheese
- 1 large avocado
- 2 limes (juice and zest)
- 1 cup of confectioners‘ sugar
- ½ teaspoon of vanilla extract
In a small bowl, combine ¼ cup (roughly 30g) of heavy cream and the powdered gelatin, and leave it to bloom for 5 minutes. Meanwhile, blend the rest of the cream, avocado, cream cheese, lime juice and zest, confectioners‘ sugar and the vanilla extract for a minute, until it gets smooth. Melt the cream and gelatin by microwaving it for 15-20 seconds (pay attention so it won’t boil over). Combine all in a large bowl and mix again.
With the help of a spatula, pour the mixture on top of the frozen crust and spread it evenly. Freeze the avocado cheesecake for 1-2 hours and transfer it to the refrigerator for 30 minutes afterward. We recommend to decorate it with whipped cream and more lime zest.
